It’s worth it to look for kesar mango purée at your supermarket, an Asian market, or online. Kesar mangoes are prized for their fragrant flesh with a sweet-tart taste. Kesar mango purée is sweetened, so it balances the tart plain yogurt nicely.

When purchasing yogurt for a lassi, try to find a brand with a thin consistency. If you want to use a Greek-style yogurt, you might need to thin it by adding a couple of additional tablespoons of water to the mixer when blending it with the mango puree and lime juice, and then including more as needed to adjust the consistency of the lassi to your preferences.

2 cups plain yogurt

1 cup mango

1/4 cup water

2 teaspoons lime juice
Combine yogurt, mango, water, and lime juice in a mixer; blend on high speed till smooth and velvety. Taste and add additional water or more lime juice if needed; you want this to be creamy however thin sufficient to drink. Put into 2 glasses and serve.
